This mouthwatering dish is perfect for bringing the family together for a delightful meal that’s both satisfying and oh-so-delicious.

Ingredients for 4 servings:

  • 1 whole chicken
  • 2 ounces olive oil
  • 1 ounce sea salt
  • 1 lemon
  • Pepper
  • 3 cloves of garlic
  • 4 sprigs of thyme
  • 2 sprigs of rosemary
  • 13.4 fl. oz white wine
  • A bag of fries

Preparation:

  • Mix the olive oil with pepper and salt in a bowl. Rub this mixture all over the chicken, both inside and out. Let the chicken come to room temperature and sprinkle it with lemon juice. Stuff the garlic cloves and herb sprigs into the cavity of the chicken.
  • Preheat the oven to 437 degrees Fahrenheit. Cover a roasting pan completely with olive oil and place the chicken breast-side down in the pan. Put it in the middle of the oven and then reduce the temperature to approximately 347 degrees Fahrenheit. After the chicken has been in the oven for 20 minutes, turn it over. Roast for another approximately 35 minutes. Meanwhile, prepare the fries according to the package instructions.
  • Once the chicken is out of the oven, wrap it in foil and let it rest for 10 minutes. Remove any remaining bits from the roasting pan, add the wine, and simmer over low heat to reduce. Use a spoon to scrape up the cooked bits and incorporate them into the gravy. Season the gravy with salt, pepper, and lemon juice to taste. Pour the gravy over the chicken and serve!
