5x easy lunch recipes for work
Not everyone has access to a cafeteria full of fresh salads and lovely sandwiches at work. Most of us need to bring our own lunch. To get you a little inspired we have 5 easy work lunches for you. Perfect to prep ahead, so you can make a whole batch of a delicious, healthy lunch at once.
Beetroot wrap
Ingredients
- 2 beetroot wraps
- 1 avocado
- 2x handful of arugulas
- 5 cherry tomatoes
- 2 tablespoons of pesto
- 4 slices of chicken breast
Preparation
Spread the pesto on the beetroot wraps, place the chicken breast slices on the wraps, and distribute the avocado over the 2 wraps. Cut the tomatoes into quarters. Place the tomatoes on the wrap, along with the arugula, and fold the wraps. Enjoy!
Shrimp pasta salad
Ingredients
- 3,5 oz. of pasta
- ½ avocado
- 2 tablespoons of red pesto
- bell pepper
- 1 clove of garlic
- 2,5 oz. of shrimp
- 1,75 oz. of lettuce
- 0,35 oz. of pine nuts
- 1,75 oz. of cherry tomatoes
Preparation
Prepare the pasta and pine nuts as indicated on the package. Cook the shrimp with the garlic until done. Slice the avocado, bell pepper, and tomatoes into strips. Combine everything in one bowl and mix together with 2 tablespoons of red pesto.
Roast beef, avocado, and cheese sandwich
Ingredients
- Roast beef
- ½ avocado
- 0,35 oz. grams of Parmesan cheese
- 2 rolls
- Capers
Preparation
Slice the avocado into slices. Place the roast beef on the 2 rolls, distribute the avocado and cheese over the rolls, and top with capers.
Overnight oats
Ingredients
- 1,5 oz. of oats
- 0,35 ox. of chia seeds
- 3 teaspoons of cocoa powder
- Handful of blueberries
- 4 oz. of yogurt
- ½ banana
- 1 teaspoon of vanilla extract
- 3,5 fl oz. of milk
- 1 oz. of almonds
Preparation
Put all ingredients (except the almonds) in a bowl and stir well. Finely chop the almonds and mix half of them into the oat mixture. Divide the mixture into jars. Garnish with the remaining almonds. Let the overnight oats thicken for at least 1 hour, or you can prepare it the day before and take it to work.
Banana bread
Ingredients
- 5 bananas
- 3,5 oz. of dates
- 3,5 oz. of desiccated coconut
- 5,5 oz. of almond flour
- 3 eggs
- 2 oz. of chocolate chips
- Pinch of salt
- 2 teaspoons of baking powder
Preparation
Preheat the oven to 390F. Puree the banana together with the dates into a smooth batter. Beat the eggs into the banana mixture. Add the desiccated coconut, almond flour, baking powder, salt, and chocolate chips to the batter. Bake for 30-45 minutes in the oven and take it to work the next day.
