Pasta with tuna

Ingredients
- 1 dash of olive oil
- 1 red onion, peeled and finely chopped
- 1 red Spanish fresh chili, seeds removed and finely chopped
- 1 teaspoon cinnamon
- 1 bunch of fresh basil, leaves only
- 2 cans of peeled tomatoes (14 oz each)
- 1 can of tuna in olive oil (10 oz)
- Ground pepper and salt
- 18 oz rigatoni or penne
- Grated zest and juice of half a lemon
- Handful of freshly grated Parmesan cheese
Preparation
First, take a pan, heat the olive oil, and sauté the onions. Once done, add the Spanish pepper and cinnamon, and cook for 5 minutes over medium heat until the onions are translucent. Now, add the tomatoes and tuna with a generous pinch of salt. It’s time to turn up the heat and flatten the tomatoes with a spoon. Bring the mixture to a boil and then simmer for 20 minutes. For extra flavour, add some freshly ground pepper and salt. Meanwhile, cook the pasta in plenty of salted water. Save a portion of the cooking water, and then add the pasta along with the roughly chopped basil leaves, lemon zest and juice, some Parmesan cheese, and a dash of olive oil to the tomato-tuna sauce. Finally, mix everything together and add some cooking water if needed. Time to serve and enjoy your meal!
