Parsnip Soup 

Ingredient

  • 34 fl oz water 
  • 14 oz parsnips 
  • 2 vegetable bouillon cubes 
  • 1 onion 
  • 1 clove of garlic 
  • 3 tbsp wholegrain mustard 
  • A knob of butter 

Preparations

Peel the parsnips and cut them into equal pieces. Finely chop the onion and garlic. Heat the knob of butter in a soup pot and sauté the parsnips and garlic for a short time, making sure to stir regularly. Add the water and bouillon cubes to the pot. Bring it to a boil and let it simmer gently for 10 minutes. Turn off the heat and add the mustard. Puree the soup and divide over two bowls. Enjoy your meal!
