Lemon rolls
Ingredients for 8 rolls
- A nice cup of coffee
- 1 package of croissant dough
The filling
- 1 lemon
- 3.5oz sugar
- 1 sachet of vanilla sugar
- 1.75oz butter (softened)
Topping
- 1 lemon
- 2 tablespoon cream cheese
- 3,5oz powdered sugar
Preparation
To begin, preheat the oven to 390F. Now you can start making the glaze. Zest the lemon and place it in a bowl. Then add the sugar and vanilla sugar and mix well. Set it aside for a moment and roll out the dough. There are seams in the dough, but you can seal them now. Easily press the seams closed with your fingertips. Once it’s fully rolled out, spread the softened butter on top. Evenly distribute the lemon sugar mixture on top of the butter.
Now roll up the dough and cut it into 8 slices. Place them in a baking dish lined with parchment paper. Then put them in the oven for 10 to 12 minutes. Meanwhile, you can make the glaze.
Zest the lemon and squeeze out its juice. In a bowl, combine the cream cheese, lemon zest, and powdered sugar. Stir it until well mixed, then slowly add the lemon juice until you achieve a smooth mixture.
When the rolls are out of the oven, let them cool slightly. Once they have cooled a bit, spread the glaze on top. Serve them with a cup of coffee and enjoy!
