Lemon curd

Ingredients
- Juice of 2 lemons, about 0.5 FL.
- Zest of 2 lemons
- 4 OZ. Of butter
- 7 OZ. Of sugar
- 2 eggs
Instructions
- In a heat-resistant bowl, combine butter, sugar, lemon juice, and zest. Stir the mixture well.
- Heat the bowl in a double boiler until the butter is melted. Remove the bowl from the heat and add the eggs. Stir thoroughly.
- Place the bowl back on the double boiler and continue stirring until the mixture gradually thickens. The mixture is ready when you can draw a line through it with your finger, and the curd doesn’t flow back immediately. Be cautious not to let the mixture boil to prevent bits of coagulated egg.
- Remove the curd from the heat and strain it through a sieve. Then, pour the curd into a jar and store it in the refrigerator. Delicious on scones or as a topping for desserts. Enjoy your meal!
