Herb-crusted rack of lamb with garlic mashed potatoes
Ingredients:
- 2 racks of lamb, trimmed and frenched (about 1 1/2 pounds each)
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 cloves of garlic, minced
- 1 cup breadcrumbs
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 4 large potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons unsalted butter
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 400°F.
- In a small bowl, mix together the Dijon mustard, chopped rosemary, chopped thyme, minced garlic, breadcrumbs, salt, and black pepper to create the herb crust.
- Pat the racks of lamb dry with paper towels, then season them generously with salt and black pepper.
- Heat the olive oil in a large ovenproof skillet over medium-high heat. Sear the racks of lamb on all sides until golden brown, about 2-3 minutes per side.
- Remove the skillet from the heat and evenly spread the herb crust mixture over the tops of the racks of lamb.
- Transfer the skillet to the preheated oven and roast the lamb for 15-20 minutes for medium-rare doneness, or until the internal temperature reaches 135°F (57°C). Adjust the cooking time according to your desired level of doneness.
- While the lamb is roasting, prepare the garlic mashed potatoes. Place the diced potatoes in a large pot and cover them with cold water. Bring the water to a boil, then reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until tender.
- Drain the cooked potatoes and return them to the pot. Add the milk, butter, minced garlic, salt, and black pepper to the pot.
- Mash the potatoes with a potato masher or fork until smooth and creamy. Adjust the seasoning to taste.
- Once the lamb is cooked to your desired doneness, remove it from the oven and let it rest for 5-10 minutes before slicing.
- Serve the herb-crusted rack of lamb hot alongside the creamy garlic mashed potatoes. Garnish with fresh rosemary sprigs if desired.
