Herb-crusted rack of lamb with garlic mashed potatoes 

Ingredients: 

  • 2 racks of lamb, trimmed and frenched (about 1 1/2 pounds each) 
  • 2 tablespoons Dijon mustard 
  • 2 tablespoons fresh rosemary, chopped 
  • 2 tablespoons fresh thyme, chopped 
  • 4 cloves of garlic, minced 
  • 1 cup breadcrumbs 
  • Salt and black pepper to taste 
  • 2 tablespoons olive oil 
  • 4 large potatoes, peeled and diced 
  • 1/2 cup milk 
  • 4 tablespoons unsalted butter 
  • Salt and black pepper to taste 

Instructions: 

  • Preheat your oven to 400°F. 
  • In a small bowl, mix together the Dijon mustard, chopped rosemary, chopped thyme, minced garlic, breadcrumbs, salt, and black pepper to create the herb crust. 
  • Pat the racks of lamb dry with paper towels, then season them generously with salt and black pepper. 
  • Heat the olive oil in a large ovenproof skillet over medium-high heat. Sear the racks of lamb on all sides until golden brown, about 2-3 minutes per side. 
  • Remove the skillet from the heat and evenly spread the herb crust mixture over the tops of the racks of lamb. 
  • Transfer the skillet to the preheated oven and roast the lamb for 15-20 minutes for medium-rare doneness, or until the internal temperature reaches 135°F (57°C). Adjust the cooking time according to your desired level of doneness. 
  • While the lamb is roasting, prepare the garlic mashed potatoes. Place the diced potatoes in a large pot and cover them with cold water. Bring the water to a boil, then reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until tender. 
  • Drain the cooked potatoes and return them to the pot. Add the milk, butter, minced garlic, salt, and black pepper to the pot. 
  • Mash the potatoes with a potato masher or fork until smooth and creamy. Adjust the seasoning to taste. 
  • Once the lamb is cooked to your desired doneness, remove it from the oven and let it rest for 5-10 minutes before slicing. 
  • Serve the herb-crusted rack of lamb hot alongside the creamy garlic mashed potatoes. Garnish with fresh rosemary sprigs if desired.
