Healthier eggs benedict 

Enjoy a lighter twist on a classic brunch favorite with this Healthier Eggs Benedict. Using whole wheat bread and smoked salmon, this version offers a nutritious and delicious balance of flavors. Perfect for a wholesome start to your day or a special brunch, this recipe is both simple and satisfying.

Ingredients for 2 servings: 

  • 2 slices of whole wheat bread 
  • 2 eggs 
  • 1 tbsp white wine vinegar 
  • Cherry tomatoes 
  • 4 slices of smoked salmon 
  • Pepper 
  • Salt 

Preparation: 

Start by toasting the bread and poaching the eggs. To poach the eggs, heat a pan of water, making sure it doesn’t boil. Add 1 tbsp of white wine vinegar, which will help the eggs set faster. Gently stir the water in a circular motion with a spoon, being careful not to stir too vigorously. 

Place an egg in a small bowl and gently slide it into the center of the swirling water. Let it cook for about 4 minutes in the water, or slightly longer if you prefer a firmer yolk. 

Now it’s time to assemble the sandwiches. If desired, spread some butter on the bread slices, then place 2 slices of smoked salmon on each slice. Top with the poached egg and halved cherry tomatoes. Season with salt and pepper to taste.
