Creamy garlic shrimp pasta

  • 12 oz fettuccine pasta 
  • 1 lb large shrimp, peeled and deveined 
  • 4 cloves garlic, minced 
  • 1 cup heavy cream 
  • 1/2 cup grated Parmesan cheese 
  • 2 tbsp unsalted butter 
  • 2 tbsp olive oil 
  • 1/4 cup chopped fresh parsley 
  • Salt and pepper to taste 
  • Crushed red pepper flakes (optional, for a spicy kick) 

Instructions: 

  • Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta cooking water, and set aside. 
  • Prepare the shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the shrimp to the skillet and season with salt, pepper, and crushed red pepper flakes if using. Cook the shrimp for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside. 
  • Make the creamy garlic sauce: In the same skillet, melt the butter over medium heat. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth. Season the sauce with additional salt and pepper to taste. 
  • Combine and serve: Add the cooked fettuccine pasta to the skillet with the creamy garlic sauce, tossing to coat the pasta evenly. If the sauce is too thick, gradually add some of the reserved pasta cooking water to thin it out. Return the cooked shrimp to the skillet and toss to combine with the pasta and sauce. 
  • Garnish and enjoy: Remove the skillet from the heat and sprinkle chopped fresh parsley over the top. Give the pasta a final toss to incorporate the parsley. Serve the Creamy Garlic Shrimp Pasta hot, garnished with additional Parmesan cheese if desired.
