Buddha bowl 

Ingredients for 4 people 

  • ½ red cabbage 
  • 2 tbsp olive oil + 1 tbsp olive oil 
  • 1 tsp paprika powder 
  • 14 oz. Grated carrots 
  • ½ tsp cumin 
  • Pinch of chili powder 
  • 9 oz Mushrooms 
  • 18 oz. Cherry tomatoes 
  • 3.5 oz. Couscous 
  • 3.5 oz. Quinoa 
  • 1 vegetable bouillon cube 
  • Pinch of salt and pepper 
  • 14 oz. Mixed salad 
  • 2 oz. Pumpkin seeds 
  • 2 tsp sesame seeds 
  • 24 meatballs 
  • For the dressing 
  • 3 tsp honey 
  • 4 tbsp mustard 
  • 2 tbsp water 

Preparation 

Prepare the couscous and quinoa according to the package instructions, adding half of the bouillon cube to the water. Meanwhile, slice the mushrooms and halve the cherry tomatoes. In a pan, heat 2 tbsp of oil and add the mushrooms, paprika powder, cumin, and chili. Cook until the mushrooms are golden brown, then turn off the heat. Meanwhile, in another pan, cook the meatballs. 

The dressing is very simple: mix honey, mustard, and water in a bowl until smooth.  

Divide the salad, couscous, quinoa, vegetables, pumpkin seeds, and meatballs into 4 bowls, and top with sesame seeds and dressing. Enjoy your meal!
