Beef bourguignon

For the beef bourguignon: 

  • 2 pounds beef chuck, cut into 1-inch cubes 
  • Salt and black pepper to taste 
  • 2 tablespoons all-purpose flour 
  • 4 tablespoons unsalted butter 
  • 4 slices bacon, chopped 
  • 1 onion, diced 
  • 2 carrots, peeled and sliced 
  • 2 cloves garlic, minced 
  • 1 tablespoon tomato paste 
  • 2 cups red wine (such as Burgundy) 
  • 2 cups beef broth 
  • 2 bay leaves 
  • 1 teaspoon dried thyme 
  • 1 pound mushrooms, quartered 
  • Chopped fresh parsley for garnish (optional) 

Instructions: 

  • Prep and brown beef: Season beef with salt and pepper, then coat with flour. Brown beef in butter in a Dutch oven. Remove and set aside. 
  • Cook Bacon and veggies: Cook bacon until crispy. Add onion, carrots, and garlic. Cook until softened. Stir in tomato paste. 
  • Deglaze and simmer: Pour in red wine, scraping the bottom. Simmer for 5 minutes. Add beef, broth, bay leaves, and thyme. Cover and simmer in the oven at 325°F for 2-2 1/2 hours. 
  • Saute mushrooms: Brown mushrooms in butter in a separate skillet. 
  • Combine and serve: Stir sautéed mushrooms into beef. Adjust seasoning. Garnish with parsley if desired. Serve hot.
