Zucchini bread

Zucchini bread is a delightful and healthy treat that’s easy to make. Ingredients: 

– 2 medium zucchinis, grated   

– 2 eggs   

– 1/2 cup olive oil   

– 1 cup sugar   

– 2 cups flour   

– 1 teaspoon baking powder   

– 1/2 teaspoon baking soda   

– 1/2 teaspoon salt   

– 1 teaspoon vanilla extract   

– 1 teaspoon cinnamon (optional)   

– 1/2 cup chopped walnuts or pecans (optional)   

Instructions: 

1. Preheat the oven to 175°C (about 350°F). Grease a muffin tin or use paper liners. Grate the zucchinis and pat them dry with paper towels to remove excess moisture. 

2. In a large bowl, whisk together the eggs, olive oil, sugar, and vanilla extract until smooth. Stir in the grated zucchini. 

3. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon (if using). 

4. Gradually add the dry ingredients to the wet mixture, stirring until well combined. If using, fold in the chopped nuts. 

5. Evenly distribute the batter into the muffin cups, filling each about two-thirds full. 

6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the centre comes out clean. 

7. Let the zucchini bread cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
