Chia pudding with mango

Ingredients

for 1 person

  • 5 fl. oz Coconuts milk
  • 2.5 fl. oz Frozen mango cubes
  • 2 tbsp chia seeds

Instructions

Prepare this pudding the night before. In a sealable jar, combine the chia seeds and coconut milk. Mix well, seal the jar, and refrigerate overnight. Take the mango cubes out of the freezer for the next morning. Using a hand blender, puree the mango. If the puree is too thick for your liking, you can thin it out with some water. Remove the pudding from the refrigerator and spoon the mango puree on top. Finish by adding some additional mango cubes. Enjoy your meal!
