Blueberry muffins
Ingredients for 10 muffins:
– 2 eggs
– 220 grams of flour (about 7.8 oz)
– 2 teaspoons of baking powder
– 75 grams of sugar (about 2.6 oz)
– 2 tablespoons of vanilla extract
– 170 grams of blueberries (about 6 oz)
– 100 grams of coconut oil (about 3.5 oz)
Preparation:
1. Preheat the oven to 165°C (about 330°F) and melt the coconut oil. After washing the blueberries, set them aside in a bowl.
2. In a separate bowl, mix the eggs, flour, 2 teaspoons of baking powder, 75 grams (2.6 oz) of sugar, 2 tablespoons of vanilla extract, and the melted coconut oil. Stir everything well until it forms a smooth batter. Gently fold in the blueberries using a spatula.
3. Grease 10 muffin cups and divide the batter evenly among them. Bake the muffins for 20 minutes. Check if they are fully baked by inserting a toothpick—if it comes out clean, they’re ready!
4. Let the muffins cool down before serving.
