Apple pork pie

Ingredients: 

For the pastry: 

  • 250 grams flour 
  • 125 grams butter 
  • 1 teaspoon salt 
  • 5 tablespoons cold water 

For the filling: 

  • 500 grams pork, diced 
  • 2 medium-sized apples, peeled and sliced 
  • 1 onion, finely chopped 
  • 2 cloves garlic, finely chopped 
  • 1 teaspoon dried thyme 
  • 1 teaspoon dried rosemary 
  • Salt and pepper to taste 
  • 250 ml chicken broth 
  • 2 tablespoons flour mixed with 2 tablespoons water (for thickening) 

Instructions: 

For the pastry preparation: 

  • Mix the flour and salt in a bowl. 
  • Cut the butter into small pieces and add it to the bowl. 
  • Rub the butter with your fingers into the flour until the mixture resembles fine breadcrumbs. 
  • Add the cold water and mix everything into a dough. 
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes. 

Filling preparation: 

  • Heat some oil in a pan over medium heat. 
  • Add the diced pork to the pan and brown it. Remove the meat from the pan and set it aside. 
  • Add the onion to the same pan and sauté until translucent. 
  • Then add the garlic and sauté for another minute. 
  • Return the cooked pork to the pan. 
  • Add the dried thyme, rosemary, salt, and pepper, and stir well. 
  • Pour in the chicken broth and bring it to a boil. Let it simmer until the meat is cooked. 
  • Add the apple slices and cook for an additional 5 minutes. 
  • Then add the flour-water mixture to thicken the filling. Allow the mixture to cool. 

Assembling the pie: 

  • Preheat the oven to 200 degrees Celsius. 
  • Divide the pastry into two parts. Roll out one part into a round sheet for the bottom and the other part for the top of the pie. 
  • Line a pie dish with the pastry. 
  • Add the filling and cover it with the other sheet of pastry. 
  • Press the edges firmly and trim any excess dough. 
  • Make a few slits in the top of the pie to allow steam to escape. 
  • Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden brown. 
  • Remove from the oven and let the pie cool for a few minutes before slicing. Enjoy your meal!
