Apple pork pie
Ingredients:
For the pastry:
- 250 grams flour
- 125 grams butter
- 1 teaspoon salt
- 5 tablespoons cold water
For the filling:
- 500 grams pork, diced
- 2 medium-sized apples, peeled and sliced
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 250 ml chicken broth
- 2 tablespoons flour mixed with 2 tablespoons water (for thickening)
Instructions:
For the pastry preparation:
- Mix the flour and salt in a bowl.
- Cut the butter into small pieces and add it to the bowl.
- Rub the butter with your fingers into the flour until the mixture resembles fine breadcrumbs.
- Add the cold water and mix everything into a dough.
- Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Filling preparation:
- Heat some oil in a pan over medium heat.
- Add the diced pork to the pan and brown it. Remove the meat from the pan and set it aside.
- Add the onion to the same pan and sauté until translucent.
- Then add the garlic and sauté for another minute.
- Return the cooked pork to the pan.
- Add the dried thyme, rosemary, salt, and pepper, and stir well.
- Pour in the chicken broth and bring it to a boil. Let it simmer until the meat is cooked.
- Add the apple slices and cook for an additional 5 minutes.
- Then add the flour-water mixture to thicken the filling. Allow the mixture to cool.
Assembling the pie:
- Preheat the oven to 200 degrees Celsius.
- Divide the pastry into two parts. Roll out one part into a round sheet for the bottom and the other part for the top of the pie.
- Line a pie dish with the pastry.
- Add the filling and cover it with the other sheet of pastry.
- Press the edges firmly and trim any excess dough.
- Make a few slits in the top of the pie to allow steam to escape.
- Bake the pie in the preheated oven for 30-35 minutes, or until the crust is golden brown.
- Remove from the oven and let the pie cool for a few minutes before slicing. Enjoy your meal!
